We know what is in our food because we know where and how it was grown.

Vegetables start near the wood stove in February and move out to our high tunnel as soon as temperatures allow. We cultivate the garden using horse power as much as possible. The use of cover crops increases nutrient availability and supports a diverse community of soil microbes and reduces our reliance on external fertilizers.

We raise Dexter cattle on our farm using rotational grazing through several small pastures. These hardy, small breed cattle fit well into our farm, moving around and adding nutrients to the soil. Rotational grazing causes the cattle to eat a greater percentage of the food in each space, not just eating the more palatable grasses. We are also able to more consistently feed them grasses growing at the optimum composition for healthy bovine growth.

Pigs are delicious when processed into bacon, sausage, coppa, and other products. They are also cute and entertaining to watch, and they do a wonderful job of turning our soil in the garden and forest, playing a role in our pasture management plan at the same time that they produce delicious food.

Our meat and vegetables are processed here on the farm.

For vegetables this is easy, involving cleaning, cooling, and freezing or canning as needed.

Processing meats is more complicated and requires special care to maintain product safety and quality. We have been custom cutting meats for over 10 years now, with training from local butchers and national programs.

While our food is well and safely processed, we do not offer foods that have undergone USDA Inspection. This means we can not sell individual retail cuts of meat, only whole sale live animals.

This industry is incredibly complex and not designed to benefit small producers or local food systems. We could talk about this for hours, and are happy to educate our customers when they are interested.
